1 cup almond milk (or any milk of your choice)

1 tbsp maple syrup or honey

½ tsp vanilla extract

Fresh fruit, nuts or granola for topping
Method

Mix the chia seeds, almond milk, maple syrup (or honey) and vanilla extract in a medium bowl. Stir well to ensure the chia seeds are evenly distributed.

Let the mixture sit for about 10 minutes, then stir again to prevent clumping.

Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.

Once thickened, stir the pudding and top with fresh fruit, nuts or granola.
