LSA Meal Banana Bread Muffins

Ingredients

  • 1 cup all-purpose flour

  • ½ cup Top Athlete LSA Meal

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ tsp cinnamon

  • 3 ripe bananas, mashed

  • ⅓ cup melted coconut oil or vegetable oil

  • ¼ cup honey or maple syrup

  • 2 eggs

  • 1 tsp vanilla extract

  • Optional: ½ cup chopped nuts or chocolate chips

Method

  1. Preheat your oven to 175°C and line a muffin tin with paper liners.

  2. Mix the dry ingredients together in a bowl (flour, LSA Meal, baking powder, baking soda, salt, cinnamon).

  3. In another bowl, whisk together the mashed bananas, oil, honey, eggs and vanilla extract.

  4. Combine the wet and dry ingredients, stirring until just mixed. Fold in nuts or chocolate chips if using.

  5. Spoon the batter into the muffin tin, filling each cup about three-quarters full.

  6. Bake for 18–20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.

  7. Let them cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
